Who is Stephano Notte from A Bite to Remember and what is their importance?

Stephano is unconscious or in hiding for the whole novel. He is Vincent's human vice president. Stephano is the only human in his family and his mother wants to turn him but he has refused her offer telling her that he prefers to be mortal.
