Why does Chef Ayden instruct Emoni to put her culinary dish in the trash in the novel, With the Fire on High?

Initially, Emoni and Chef Ayden do not see eye-to-eye as Emoni cooks from the heart and uses her instincts as opposed to formal culinary guidelines. Their disagreements come to ahead when Chef Ayden instructs her to put her dish in the trash and refuses to taste it as she has not followed the recipe.
