Why does the wine committee at M's lunchtime restaurant stock wine that is not allowed to be on the restaurant's wine list?

The wine committee at Blade's stocks the Algerian red wine that M drinks; however, they all feel the wine is so terrible that the committee will not allow the Algerian wine to be listed on the wine list. They only stock it because it is what M likes to drink.
