Who is Biju from The Inheritance of Loss and what is their importance?

Biju is the cook's son. He travels to America with a temporary visa and overextends his stay. While in New York, he finds shelter in a basement, along with numerous other illegal immigrants; he finds many odd jobs. He is tortured by the fact that he has to prepare and cook beef, which is sacred in India.
