Why have the producers decided to give Dr. Griggs a chance to speak lines and interact with the other characters?

I assume you are referring to the film? Dr. Grigg's appearance might likely be seen to add a more realistic depiction in the scene.... rather than the doctor not showing up at the house and sending Susanna with a message.
