In "Punch and Whiskey," what plan does Liz enact?

Liz has been planning for some time to steal horses and workers from the Colonel; on the night of the "English" dinner, she puts her plan into action. She gets everyone on the estancia very drunk and in the drunken debauchery that follows, 20 men and horses are able to slip away and begin traveling toward her estancia.
