Dillard is mimicking the Eskimos, who stalk game in the summer. The Eskimos stalk the game for food for the body. Dillard stalks game to "feed" her curiosity. The difference between what Dillard now calls "stalking" and her observations in earlier chapters is that she is now actively seeking wildlife in order to observe it, rather than waiting for an animal or insect to randomly cross her path.
