Who is the antagonist in Moby-Dick by Herman Melville?

The antagonist would be Captain Ahab. That isn't to say that the protagonist is Moby Dick rather that Captain Ahab's crazy hell bent obsession with killing the whale puts the whole crew of the Pequod in danger.
