What did Slocum do while out on the ocean for such long stretches of time?

There was always much work to be done aboard the Spray. When Slocum was not working or writing, he spent his time reading books picked up in ports along his route. Slocum also discusses the presence of whales, sharks, and various birds along with their attributes and habits.
