What are the similarities and differences between learning and acquiring a belief?

Socrates and Gorgias claim that there is false and true belief, but not false and true knowledge. Knowledge and belief are both imparted through "learning," which is achieved through persuasion. However, the difference in persuading someone to believe versus persuading someone to know is that belief does not require certainty to be achieved.
