The cake is to be the crowning glory of Mama's birthday party, and when it burns, it represents the ultimate failure of Beverly's plans for the evening to be perfect. As such, it also foreshadows events later in the play, when other items of food become weapons in a food fight that manifests and dramatizes tension between the black Act One characters and the non-black Act Two characters.
