What function does the "Up and Out" (144) button in the glass elevator perform?

When Mr. Wonka stretches up the ceiling in order to push the "Up and Out" (144) button, he tells Charlie and Grandpa Joe that the button will now cause the elevator to shoot upwards with great enough speed to break through the factory roof.
