What religious thing does Catherine talk about all through the book in Catherine Called Birdy?

Throughout the novel, Catherine makes mention of the Saint's days as she writes her journal entries. She is intrigued by the Book of Saints, and as a result, we learn a lot about them too. She talks about Saints I'd never heard of.
