What do the Sargents do to the sugar maple trees that makes Marguerite fear for their survival?

The Sargents tap the sugar maples and drain away their sap to boil down for candy. Marguerite has to be reassured multiple times that taking the sap will not harm the trees. Marguerite has never seen such a thing and is frightened for the trees.
