Who is Martine from Anecdotes of Destiny ; and, Ehrengard and what is their importance?

Martine appears in Babette's Feast. She is the Dean's oldest daughter, and like her sister Phillippa, she never marries. At the beginning of the story, Martine is described as a beautiful young woman, who attracts the attention of the young officer Lorens Loewenhielm.
