Who is Katherine III from An Abundance of Katherines and what is their importance?

Katherine III is the Katherine that Colin dated when he was in fourth grade. She is the only Katherine that does not seem to comply with the theorem. After calling Katherine III, Colin realizes that he dumped her rather than the other way around, so in fact, the theorem does work.
