Other than taste, what other factors does Ralston have to consider when deciding on whether to drink his urine?

Ralston knows the urine tastes like nothing else but urine. However, the urine is not a clear color and quite orange-brown. This is not a good indication of its purity and how salty its content is. If Ralston drinks urine that is too concentrated, it only dehydrates him even more. If it is salty but less than his blood, it can still possibly do something better than nothing.
